Mom's Versatile Dough:
Used for pizzas, rolls, bread, cinnamon rolls, scones, etc.
When I was growing up we had some form of homemade bread with almost every dinner, and we were the envy of the neighborhood kids. Other parents had sweets in the house, we had our bread. One of my little sister's friends even asked for a batch of mom's homemade rolls as her birthday present one year!
Recipe:
1 1/3 C hot water
2 t Yeast
3 C flour (delicious with white or wheat)
2 T Oil
1/4 C Sugar
1/3 C Gluten
1 1/2 t Salt
Combine water and yeast and let yeast bubble for a few minutes. Knead all ingredients until soft but not sticky dough forms (more flour or water may need to be added)
For bread: let dough raise in bowl, shape into loaves and then let raise again to desired loaf size before baking at 350 for about 35 minutes.
For rolls: shape into rolls and let dough raise. Bake at 350 for about 15 minutes
Notes:
I don't have gluten in the house, so I always substitute 1/3 cup of flour in place of the gluten. On top of that, when I follow the above recipe exactly I end up having to add more flour most of the time so I just add about 1/2-3/4 cup extra to begin with.
This recipe is delicious with either white or wheat flour.

Katie you're adorable! What an awesome project this blog is and what a fun beginning! And just so you know, I've been baking bread for years (not regularly, but often enough) and no 2 times are the same. In fact the last batch I baked was a total disaster! So we're in the same boat except I'm a ton older and supposedly more experienced! :)
